There are many contributing factors in the production, processing, packaging and distribution of food that affect nutrition, quality and price. Most of the wheat and flour contained in our food is the product of factory farmed, industrial processed grain - handled many times and shipped long distances through multiple handlers.

• Most flour is bleached. Bleaching is performed with small amounts of poisonous chemicals that accelerate the aging and whitening of flour. These chemicals destroy the natural nutrition and quality of flour and should not be eaten. Most flour bleaching agents are outlawed in Europe. North Country Farms flour is stone milled from locally grown wheat and is not bleached. Our flour maintains the nutrition and the natural characteristics of wholesome wheat.


• Most flour is enriched. At first enrichment sounds like a good thing, but it is done because high temperature factory milling and poisonous bleaching agents destroy the nutrients in wheat. Bleached, enriched flour is a mass-produced industrial product. North Country Farms uses stone mills. Our milling process occurs at a much lower temperature than large-scale factory milling. North Country Farms flour captures  the original vitamins and minerals that are found in locally grown, cold milled wheat.

• Food prices are rising as food quality diminishes. Food prices have steadily increased as world consumption continues to grow. Wheat prices have reached consecutive record highs as farmers are choosing to grow alternative cash crops such as corn and soybeans. As a result, factory processors search for continual methods to make flour "cheaper" on the shelf. North Country Farms does not cut corners when it comes to locally producing wholesome food for our community.


• Transportation costs are a direct factor to the rising cost of basic commodities. When food is transported long distances or handled many times, it must have a longer shelf life. Shelf life comes from additives and packaging that you don't need in your food. Locally produced and processed food allows consumers to enjoy the benefit of better nutrition and higher quality. The price you pay is for quality and not for transportation and additives.
